Cowboy Caviar

1-cup corn (fresh off the cob or frozen and thawed)
1
15 ounce can black beans, rinsed and drained
2 firm-ripe avocados, finely chopped
1 large tomato, seeded and diced
1 bunch scallions, thinly sliced
1 bunch cilantro, chopped
1 jalapeno pepper, minced (optional)
1 red bell pepper, diced
¼ olive oil
¼ cup red wine vinegar
1 garlic clove, minced
¾ teaspoon salt
½ teaspoon pepper
1-teaspoon cumin


Mix everything all together in a large bowl and serve with tortilla chips.
