Oven Roasted Orange Ginger Beef

Oven Roasted Orange Ginger Beef

1 ½ pounds stewing beef, cut into cubes
¼ cup of flour (or arrowroot for gluten-free option)
2 large yellow onions, chopped
2 large sweet potatoes, peeled and cut into chunks
3 parsnips, peeled and cut into chunks
6 carrots, peeled and cut into chunks
2 cups water
1 cup orange juice (fresh squeezed is best!)
1 ½ cups beef stock
1 cup tomato sauce
2 tablespoons grated orange zest
2 heaping tablespoons grated ginger
2 teaspoons dried thyme
1 teaspoon dried oregano
3 bay leaves

Heat oven to 325 degrees.

In a large ovenproof casserole dish, toss beef with flour.  Add remaining ingredients and stir to combine. Bake the stew with cover on for 3 to 3 ½ hours (stirring occasionally), until the beef is tender and the vegetables are al dente. Remove bay leaves before serving.
